Aprende a Catar – 3ª Parte (Las Variedades Tintas)

Si queremos profundizar en nuestros conocimientos enológicos, es necesario que aprendamos a reconocer los estilos y características organolépticas de las principales variedades de uva. A continuación, te ofrecemos una guía práctica con las tres variedades tintas de mayor consumo en el mundo, a fin de que pongas en práctica las técnicas de cata que has aprendido en nuestras anteriores entregas (Aprende a Catar 1ª Parte  –  Aprende a Catar 2ª Parte). 

Cabernet Sauvignon

Es una variedad francesa que se origina del cruce de otras dos variedades, la Cabernet Franc y la Sauvignon Blanc. Hoy en día es la variedad de mayor cultivo en el mundo por su adaptabilidad a diferentes terruños, y sus vinos se caracterizan por tener aromas intensos y un sabor persistente en boca gracias a la gran concentración de taninos y a sus altos niveles de alcohol. Los vinos Cabernet Sauvignon con crianza en madera suelen tener un gran potencial de guarda. La Cabernet Sauvignon es una variedad primordial para la elaboración de los grandes vinos ensamblados (Blend) de Bordeaux, Francia.

Estilo: Vinos corpulentos y tánicos

Aromas: Frutas Moras, Cereza, Pimientos, Especies, Madera, Tabaco.

Perfil Organoléptico:

Principales Regiones Vinícolas: Bordeaux (Francia), Languedoc Rousillon (Francia), Napa Valley (California), Valle Central (Chile), Mendoza (Argentina), Coonawarra (Australia).

Variedades Alternativas: Merlot, con taninos más suaves y mayor aroma de frutas rojas. Cabernet Franc, de menor cuerpo, pero con mayor acidez.

Pinot Noir

Variedad oriunda de Borgoña, Francia. Produce vinos secos, de medio cuerpo, de buena acidez, con intensidad aromática y taninos muy suaves y sedosos.

Estilo: Vinos tintos expresivos, vinosos y muy elegantes. Buen potencial de guarda.

Aromas: Frutas rojas (cereza, cassis, frambuesa), Florales (rosas, violetas), Vegetales (hongos, ruibarbo).

Perfil Organoléptico:

 Principales Regiones Vinícolas:

Borgoña (Francia), Sonoma (California), Rio Negro (Argentina), Otago (Nueva Zelanda).

Variedades Alternativas: Gamay, de menor cuerpo y abundantes aromas florales. Variedad emblemática de Beaujolais (Francia), en donde se producen extraordinarios vinos jóvenes sin paso por madera.

Syrah

Vinos de mucho cuerpo e intensidad aromática que se dieron a conocer en la región del Ródano, Francia, en donde usualmente se les ensambla con otras variedades (Garnacha, Mourvedre, Cinsault). Son mundialmente conocidas las denominaciones de la Costa del Ródano: Chateuneuf du Pape, Côte Rotie y Hermitage.

Estilo: Vinos tintos corpulentos y con gran amplitud aromática. Buen potencial de guarda.

Aromas: Arándanos, frambuesas, ciruelas, pimienta negra, tabaco y productos cárnicos. Dependiendo del terruño, presenta aromas florales de violeta y lavanda.

Perfil Organoléptico:

Principales Regiones Vinícolas:

Côtes du Rhône (Francia), Mendoza y San Juan (Argentina), Central Valley (California), Columbia Valley (Washington), Hunter Valley (Australia).

Variedades Alternativas: Malbec, de similar cuerpo y taninos. No presenta aromas cárnicos, pero tiene mayor presencia de aromas de frutas moras, ciruelas y  notas de chocolate y café.

 

Ahora que ya conoces las diferencias entre estas tres variedades, debes ejercitar tus sentidos y aprender a diferenciar y apreciar las cualidades de cada vino. Para este propósito, es necesario que adquieras una botella de cada variedad; esto lo puedes realizar con un grupo de amigos para que no te salga tan costoso, además de que es mucho más divertido. Te recomiendo que compres vinos de mediano valor, que no sobrepasen los 12 meses de añejamiento en madera, a fin de que puedas percibir con mayor intensidad los aromas primarios característicos de cada variedad de uva. En caso de que no consigas un vino de alguna de las variedades, puedes realizar tu cata con las variedades alternativas que hemos propuesto.
